The Best Stir-fry Sauce Ever!

I've included a complete stir-fry recipe below, but let me tell you, it's all about the sauce. I made this sauce from scratch using ingredients in my fridge that I thought would taste great together, and it worked! My Mum said, "this is the BEST stir-fry sauce I've ever had!" - I know it's my Mum saying this, but trust me, she doesn't lie. So you can use this sauce with any protein and veggie combo - but it really does work great with the pork!


Roasted Butternut Squash, Spinach & Quinoa Salad

Ingredients

Stir-fry ingredients:

2 tbsp coconut oil

2 lbs pork tenderloin thinly sliced

4 cups of vegetables

I used a mixture of white onion, broccoli, carrot, red bell pepper, cabbage

1/4 cup cilantro chopped

Sauce ingredients:

1 mango, chopped

4 limes, juiced

1/2 jalapeno, finely chopped

4 garlic cloves, crushed

3/4 cup soy sauce

2 tsp coconut sugar

1/4 cup cilantro chopped


Jasmine or brown rice to serve



Preparation

  1. To make the amazing sauce: in a mixing bowl add lime juice, soy sauce and coconut sugar. Whisk with a fork to combine. Then add garlic, mango, jalapeno and cilantro. Stir to combine. Taste to ensure the right balance between salty, spicy, sweet and sour.

  2. Optional: If you have time, coat the pork with a few spoonfuls of the sauce and allow to marinate for 30 mins to a couple of hours in the fridge.

  3. Heat a large skillet or wok over medium high heat with one tablespoon of the coconut oil.

  4. Add the sliced pork to the pan and cook, stirring often, for 5-7 minutes until cooked through. Remove pork to a plate and cover with foil to keep warm.

  5. Add remaining tablespoon of coconut oil to the skillet.

  6. Add the vegetables. Cook for 4-5 minutes until vegetables are tender but still crisp.

  7. Add the pork back to the skillet with the vegetables. Turn the heat to medium.

  8. Pour the sauce into the pan and stir for 1-2 minutes just until sauce is hot. To finish, stir in the chopped cilantro.

  9. Serve over jasmine or brown rice, and enjoy!

Note: You can replace the pork with beef, chicken, shrimp or take it vegan with tofu. You can also use different veggies... mushrooms, baby corn, bok choy would all be super yummy!
