Summer Watermelon Salad

Everything about this salad sings summer! The perfect combination of refreshing watermelon, mango and cucumber, mixed with the peppery arugula, jalapeno and zingy dressing. Take it to your next summer barbecue, add a side of grilled chicken or salmon, or enjoy it on it's own!


Roasted Butternut Squash, Spinach & Quinoa Salad

Ingredients

Salad:

3 cups watermelon cubed or balled

1 cup english cucumber chopped

1 ripe mango chopped

2 cups arugula/rocket

1/2 jalapeno sliced (use more for more heat)

1/4 cup cilantro chopped

1/4 cup basil chopped

sprinkle of crushed peanuts or pepitas

Dressing:

1 tbsp soy sauce / tamari

2 tsp fresh lime juice

2 tsp rice vinegar

1/2 tsp fresh grated or minced ginger

1 clove garlic minced or finely chopped


Preparation

  1. In a large mixing bowl add watermelon, cucumber, mango, arugula, jalapeno, cilantro and basil.

  2. Whisk together the dressing ingredients, pour over the salad and toss through.

  3. Chill in the refrigerator for 30 minutes and drain the excess liquid from the salad before serving.

  4. Serve topped with a sprinkle of crushed peanuts or pepitas.
