Carrot, Ginger & Turmeric Detox Soup

An anti-inflammatory, detoxifying soup. Perfect for supporting healthy liver function and flushing out toxins. Great for clearing up the skin and restoring immune function.


Ingredients

5 medium-large carrots, diced

1 medium sweet potato (orange flesh), diced

1 yellow onion, diced

3 garlic cloves minced (or 3 tsp)

1 tbsp fresh ginger, grated

2 tbsp fresh turmeric, grated (or turmeric powder)

4 cups vegetable stock

1 cup full fat coconut milk

Salt & pepper to taste

1 tbsp olive oil

¼ cup chopped fresh cilantro for serving



Preparation

  1. Heat the olive oil in a large soup pot on a medium heat and saute the onion until translucent (approx 3 mins). Then add ginger, garlic and turmeric to the pot and saute for an additional minute.

  2. Next add the diced carrot and diced sweet potato to the pot. Stir the mixture and saute for 2 extra minutes.

  3. Now add the vegetable stock and simmer, covered, on a low heat for about 45 minutes, until the carrots and sweet potato are cooked through and soft. You can test with with a fork.

  4. Turn off the heat and use an immersible blender to blend the soup until smooth. You can also transfer to a countertop blender and blend in batches until smooth.

  5. Once smooth, add the coconut milk and continue to blend until smooth and creamy. Then add salt and pepper to taste. You can also add more stock for a thinner soup.

  6. To serve, top with freshly chopped cilantro.
